News flash for you kale lovers out there: Today, October 1st, 2014 is National Kale Day. An entire day to celebrate the wonders of the lean, green, kale machine.

Why should we celebrate? Kale is queen of the cruciferous vegetable family. Royalty. Queen Kale abounds in nutritional riches.

Here are just a few: anti-inflammatory nutrients, flavonoids that could help prevent cancer, high fiber and protein, excellent source of vitamins C, K, and A, detoxifying antioxidants…the list goes on.
